Best Type of Rice for Sushi

The ideal choice for sushi is short-grain Japanese rice, commonly sold as “sushi rice” in stores.

This type of rice contains more starch than long-grain varieties, which helps create the sticky texture needed for rolling and shaping sushi properly.

Seasoning for Sushi Rice

Traditional sushi rice is flavored with rice vinegar, white sugar, and salt. In this version, a mild vegetable oil is also used so that the basic seasonings remain balanced and clean in taste.

The goal is to enhance the rice without overpowering its natural flavor, keeping it light and slightly tangy.

Step-by-Step Preparation of Sushi Rice

Start by rinsing the rice thoroughly under cold running water using a strainer. Continue washing until the water becomes clear, removing excess starch.

Next, place the rinsed rice and water into a pot. Bring it to a boil over medium-high heat, then reduce the heat to low, cover, and let it cook for about 12 minutes. After turning off the heat, keep the lid on and allow it to steam for another 10 minutes until fully tender.

While the rice is cooking, prepare the seasoning mixture. Combine rice vinegar, sugar, oil, and salt in a small saucepan. Warm it over medium heat until the sugar completely dissolves, then let it cool.

Once both components are ready, pour the vinegar mixture over the warm rice and gently mix. At first, the rice may seem slightly wet, but continued stirring will help it absorb the liquid and achieve the correct texture as it cools.

Serving and Enjoying

After the rice has cooled, it is ready to be used for sushi rolls or enjoyed on its own.

Fillings like cucumber, carrot, and avocado work especially well, but you can customize it with any ingredients you prefer. Adjust seasoning levels as needed to match your taste, and enjoy freshly made sushi rice as a base for homemade sushi dishes.
